- Per prima cosa preparare il caffè e lasciarlo raffreddare completamente.
- Separare i tuorli dagli albumi.
- In una ciotola montare i tuorli con 3 cucchiai di zucchero fino a che non diventano bianchi e spumosi.
- Unire il mascarpone, e mescolare amalgamando il tutto.
- In una ciotola montare a neve ben ferma gli albumi.
- Unire gli albumi montati ai tuorli, prima solo una cucchiaiata per stemperare il composto, dopodiché aggiungere la restante parte mescolando molto delicatamente facendo attenzione a non smontarli, formando una crema.
- Sul fondo della pirofila mettere un paio di cucchiai di crema. Inzuppare i savoiardi nel caffè per pochi secondi e posizionarli uno a fianco all'altro fino a formare uno strato.
- Distribuire metà della crema livellandola accuratamente e una spolverata di cacao amaro.
- Formare un nuovo strato di savoiardi inzuppati e sopra un secondo di crema.
- Livellare bene la superficie e spolverare con cacao amaro.
