The recipe was supposed to replace a second course, when meat was a luxury that only few could afford; "pallotte cace e ove" is a tasty. One of my favorite examples of Abruzese ingenuity in the kitchen can be found in these pallotte cace e ove ~ "polpette cacio e uova" in proper Italian.   1. Le pallotte cacio e ove le avevo già pronte perché me le ha date mia zia, ma vi lascio qui il procedimento. Mettete in una ciotola capiente il formaggio grattugiato misto o il rigatino (a vostra scelta anche per la quantità se volete farne un po' di più), il pane raffermo bagnato e strizzato e tritato con le vostre mani, 1 po' di prezzemolo e aglio tritato finemente e 2 uova grandi e mescolate il tutto con un cucchiaio..
  2. Ovviamente come dicevo se volete farne di più vi basta aumentare la dose degli ingredienti. Io ho lasciato gli ingredienti per 10 pallotte. Formare con le mani delle pallotte di media dimensione e adagiarle in un piatto. Intanto scaldare in una casseruola capiente l'olio di semi per friggere. Una volta raggiunta la giusta temperatura friggere un po' per volta le pallotte da entrambi i lati e poi trasferirle in un piatto rivestito di carta assorbente..
  3. In un'altra casseruola scaldare un po' di olio evo e poi aggiungere la cipolla tritata finemente e soffriggere. Poi aggiungere la passata di pomodoro e cuocere a fuoco medio basso, mescolando di tanto in tanto. Aggiungere un po' di acqua ogni tanto. Aggiungere una puntina di bicarbonato per togliere l'acidità del pomodoro. Salare ma non troppo (le pallotte sono già saporite) e aggiungere un pochino di paprika dolce. Continuare la cottura..
  4. Aggiungere le pallotte al sugo e proseguire la cottura per altri 15 minuti circa. Aggiungere un altro po' di acqua se necessario..
  5. Una volta raggiunta la cottura desiderata, servire le pallotte cacio e ove e gustarle calde, accompagnate con del pane fresco per fare la scarpetta. 🥰😋😍.
